Chilli Garlic Quinoa

Ingredients

  • Cooked Nutrillet Quinoa – 3 cups

  • Yellow bell pepper – ¼ cup

  • Sweet corn – 2 tbsp

  • Coriander powder -1/4 cup

  • Thick soya sauce – 1 tbsp

  • White pepper powder -3/4 tsp

  • Salt – to taste

       To Grind

  • Dried red chillies – 4

  • Garlic cloves – 8 small

Preparation

  • Grind the dried red chillies and the garlic cloves

  • Heat some oil, add the yellow bell pepper and some salt, sauté it uncovered, till its cooked but with a slightly crunch

  • Heat some oil, add the ground chilli garlic paste, sauté it well till it gives a nice smell, for about 5-7 minutes. Then add the coriander power and mix it well

  • Now add the soy sauce and mix for a minute, then added the sauted bellpeppers and mix well

  • Now add the cooked and cooled quinoa and mix well. Finally mix in the coarsely pounded peanuts and white pepper powder and serve it warm
