Foxtail Millet Pumpkin Pie

Ingredients

  • Nutrillet Foxtail Millet Flour- 1 cup

  • Fields of Gold Whole Wheat Flour- ½ cup

  • Pumpkin puree- 1 ½ cup

  • Eggs- 2

  • Cinnamon powder- 1 tsp

  • Nutmeg powder- ½ tsp

  • All spice powder- ½ tsp

  • Baking powder- ½ tsp

  • Baking soda- ½ tsp

  • Vanilla essence- 2 tsp

  • Palm sugar- 5 cups/ Fields of Gold Jaggery- 5 cups

  • Milk- ½ cup

  • Sunflower oil/ ghee- 1/4 cup


Preparation

  1. Pre-heat the oven at 180°C. Grease and line two 6-inch pans, preferably springform.

  2. In a bowl mix all the dry ingredients, i.e. flours, ground spices, salt, baking soda and baking powder with a spatula.

  3. Combine the wet ingredients – palm sugar, oil/ghee, pumpkin puree, vanilla essence, milk in a separate bowl. Whisk everything together until the palm sugar melts. Crack open the eggs and whisk well.

  4. Divide the batter equally and pour into the two greased pans.

  5. Bake at 180°C for about 55 minutes, until it has risen firm and a toothpick inserted in the center comes out clean.

  6. Remove the pans from the oven and allow to cool completely. Run a knife along the rim of the pans, release the springform. Run the knife through the bottom and remove gently.
