Preparation

  1. Make 1 liter of vegetable stock with vegetable trimmings, you can also use the stock powder if you find it time-consuming.

  2. Heat pan, make a roux with butter and mixed millet flour.

  3. In another pan sweat chopped garlic, onion, and herbs together.

  4. Add soaked millets, chopped pimentos and sauté for 2 mins.

  5. Add salt, chili flakes, vegetable stock and the roux and whisk thoroughly.

  6. Simmer the soup for 15 mins.

  7. Garnish with fresh thyme and serve hot.
