Rajamudi Rice is an exotic rice, once favoured maharajas and much sort after in courtly cuisine and royal kitchens. Now relegated in small pockets of cultivation, it deserves to be conserved and enjoyed. Pristine Rajamudi rice is flavourful and goes well with any Indian dish.

Directions for using rajamudi rice:

  • Wash and soak rice in clean water for one hour. Add water twice the quantity of rice. Cook on low to medium flame up to 8 whistles.
  • Add 1 part rice to 2.5 parts water inside the pressure cooker. Pressure cook the rice on a high flame for 1 whistles. Lower the flame and cook the rice for next 3 whistles. (You could also use red rice to make curd rice, dosa, idli, appam, idiappam, neer dosa and more.
