Ingredients
Fields of Gold Little Millet: ¼ cup
Butter: 1 tsp
Olive oil: 1 tbsp
Himalayan Pink Salt: 1 tsp
Italian seasoning: 1 tsp.
Fresh Thyme: Few Sprigs
Pimentos: 1 no.
Onion: 1 no.
Garlic: 1 no.
Chilli Flakes: 1 tsp.
Preparation
Make 1 liter of vegetable stock with vegetable trimmings, you can also use the stock powder if you find it time-consuming.
Heat pan, make a roux with butter and mixed millet flour.
In another pan sweat chopped garlic, onion, and herbs together.
Add soaked millets, chopped pimentos and sauté for 2 mins.
Add salt, chili flakes, vegetable stock and the roux and whisk thoroughly.
Simmer the soup for 15 mins.
Garnish with fresh thyme and serve hot.
