Ragi and Banana Pancakes

Ingredients

Preparation

  1. Mix the 2 flours together in a large mixing bowl

  2. Mash the banana

  3. Whish the egg

  4. Add the egg and the banana to the flour in the mixing bowl and mix thoroughly to make batter of pouring consistency – not too thin and not too thick

  5. Heat the pan and grease it lightly

  6. Once hot, gently pour a ladle-full of batter on it

  7. Let it cook on medium heat for a few minutes

  8. When the top begins to bubble you know it’s getting cooked.

  9. Flip to the other side and cook for a few minutes more

  10. Flip again, onto your plate and eat with butter, honey or jaggery.


   Vegetarians can replace egg with Pristine’s 3-min egg substitute

  1. For one egg, take 1 tbsp ground flaxseed in a bowl.

  2. Stir in 3 tbsp hot, just-boiled water.

  3. Allow to sit for a minute or two, till it becomes gelatinous.

  4. Use in place of the egg
